Preservation Technique: Freeze Peppers

Eddy and I love peppers. We throw them in fried rice, pizza sauce, hash browns, chili, and all kinds of dishes.

During winter we cook with peppers that we froze during summer. Did you know that freezing peppers is really easy? Here’s what you do:

  1. Select peppers without blemish or bruise.
  2. Wash and slice peppers. Remove the stem and seeds.
  3. Place sliced peppers on a pan lined with freezer paper.
  4. Stick pan in freezer.
  5. Place frozen pepper slices in freezer bag.

Easy, huh? So this weekend, grab some peppers at your local farmers’ market and freeze them!
